Methi chapathi

My friend in STL made this chappthi's, when she shared the recipe, I was thinking no one is gonna eat this methi chapathi except me at home. But I was wrong even my lil one liked it. So it's definitely a big hit !

Ingredients:
Methi - 1 small bunch
Chilly powder - 1/8 tsp
Garam masala - 1/8 tsp
Turmeric - generous pinch
Garlic - 1 grated
Oil - 1 tsp

For chapathis:
Wheat flour - 1.5 cups

Method:

Heat oil in a pan

When hot add the grated garlic, chopped methi, chilly powder, garam masala powder and turmeric.

Sauté for few minutes and turn off.

Add this mixture to the wheat flour and knead the dough with needed water , salt and little oil.

Roll them out with a rolling pin  and cook on both sides in the pan with few drops of oil.

Njoy the healthy chapathis.

Garlic bread

Everyone at home loves garlic bread . We  always eat the frozen one. This fresh one was so tasty and hardly takes 10 minutes to make.

Ingredients :
Italian bread sliced - 1 loaf
Butter - 6 table spoon
Green chilly - 1
Garlic - 3 grated
Oregano - 1/2 tsp
Salt to taste

Method:


Finely grate the garlic and finely chop the green chilly.
If the butter is at room temperature use it as is. I didn't  have time, so melted the butter for a minute in the microwave .
Now add the green chilly , garlic and oregano .

If butter is unsalted add salt .
Mix everything well. Using a bread knife or brush apply the butter on both sides if the bread .

Bake them at 400 degree Fahrenheit for 6 minutes.

Serve hot .. Crispy outside and soft 
inside with fresh garlic flavour in every bite !!

Eggless French toast

I tasted this at one my friend M's place here. I tried it sometime back and now this became a frequent breakfast item at our home on the weekend . You can make it in no time.
Ingredients :
Custard powder vanilla flovour - 2 table spoon ( I got this from indian grocery store)
Sugar - 1.5 tab spoon
Milk - 1/3 cup ( I used 2%)
Bread -3 slices
Oil or butter ( I used oil )

Method .


Mix sugar, custard and milk with whisk.
 
Heat a griddle , dip the bread in the milk mixture . Just dip and take it out as quick as possible, otherwise bread becomes too soggy .

Place the bread in the hot griddle 
Sizzle some oil or butter and cook well on both sides.
Serve hot!

Surakkai kootu

I always make the version without ground paste. I made this few weeks back and we all loved this arachuvitta kootu ( ground kootu ).
Ingredients :
Surakkai / bottle gourd/lauki - 1 medium size
Moong dal - 1/8 cup heaped
Turmeric - little

To grind :
Coconut grated - 1/4 cup 
Red chilly - 3
Pepper corns - 15
Rice flour - 1 tsp
Jeera - 1/2 tsp 

To temper :
Jeera - 1/2 tsp
Curry leaves - few
Oil - 1 tsp.

Method :


Make a raw paste of all the ingredients under 'to grind' into a fine paste with needed water.
Pressure cook bottle gourd, dhal, turmeric with salt and water ( 1.5 cups) for 1 or 2 whistles.

Make sure the vegetable is not overlooked and it should retain its shape.

Once pressure is released, add the ground paste and let it cook for 4 to 5 min in low flame .

In a small heat a tsp of oil or ghee, once hot add the jeera and curry leaves. Pour then on top of the cooked kootu.
Serve hit with rice !
