Instant Oats Dosa

After several trial and error with different ratios I finally got the right texture to the oats instant dosa.Trust me it was so thin, yummy and crunchy like the rava dosa. Everyone at home loved it and it was a hit!

Ingredients:
Quick oats - 3/4 cup
Rice flour -1/2 cup
Rava -1/4 cup

Thick curd -2 table spoon
Pepper jeera powder - 1/4 tsp
Green chilly - 1 finely chopped
Cilantro - 1 fist finely chopped
Ginger -1/2 tsp finely chopped
Water - 2.5 to 4 cups
Salt - to taste
Method:

Dry roast thhe quick oats for 3 to 4 minutes, until nice aroma comes out. Trun off the flame and let it cool .
Grind oats to a fine powder with out water.

Mix oats powder, rice flour and rava with all the other ingredients. Initially I added 2.5 cups of water,
The consistency should be same as the rava dosa.

Heat the griddle and when it hot, pour the batter holding the laddie little higher. You should see lots of holes, which meas you are having the right consistency. Sizzle some oil, cover and cook for few minutes. When the bottom becomes golden flip and cook for few seconds.

After making couple of dosas batter will become thick ( when you pour , you won't see the holes), it's time to add some more water.

Make sure to mix the batter completely before making every dosa.

Serve hot with chutney or Sambar!

Home made Paneer

Always paneer made at home taste a lot better than the store brought ones. Just 2 ingredients and its very simple to make. Its easy to make, but i hate the cleaning part, we end up using lot of utensils  :(
Ingredients:

Milk - 1 Gallon ( I used 2%, but whole milk would be much better )
Lemon - 3 big ( I used approximately 2 and 1/2 ).

Method:

Line a colander with double layer of cheescloth and set it aside.

Birng milk to a boil, make sure to stir in between to avoid burning at the bottom.

Now bring the flame to low and add the lemon juice.

Stir and you can see the curds and whey getting separated. This should not take more than 2 to 3 minutes. If you over cook it would turn rubbery.

Now trun off the heat and pour them in the colander lined with cheescloth and rinse with cold water very gently to get rid of the lemon smell.
Squeeze the water and tie the cheescloth and let it hang for couple of minutes for the excess water to drain. ( I have used a wooden spoon and a tall pot to hang the cheescloth).

Now place them in a colander and add as much weight as possible for an hour.

Now the Paneer is ready! Cut them in to cubes, for sure the edges won't turn into proper cubes..store the crumbles and cubes separately.

Freeze them and use when needed!

sprouting green gram/Mung been

Sprouting is very simple. We can do it quiet often at home and include in our diet. keep in mind soak only half the quantity of the mung been you want.Once you soak and sprout they almost become double the quantity.
wash and soak the needed green gram/Mung bean over night  in water ( atleast 8 to 10 hours).

Drain the water and let them sit in colander for few minutes.

Wet the cheese cloth and squeeze the excess water.Add the drained mung been.Tie a knot and hang them for few minutes for the excess water to drain, Later place the tied knot in a bowl and keep it in a dark place, where they don't get disturbed.

Some people keep in oven( don't turn on the oven).I keep them inside the kitchen cabinet.Let them sit for 24 hours. After a day when you see, the would have sprouted very well.
Now you can use this sprouted mung bean in variety of dishes and it is very good for health.

I have not tried the casserol method for sporuting, will try and post it soon.
